Chocolate Salted Caramel Muffins

These muffins are bursting with the ultimate flavor combination – sweet caramel and chocolate paired with sea salt. Their beautifully cracked tops house melted, gooey caramel insides. Once in a while, the tops form a crater that opens up on the warm caramel. If you skip the caramel, these muffins will still be delicious. Sea salt is also optional, but I would indulge.

Chocolate Salted Caramel Muffins (makes 16)

1 1/2 cups all-purpose flour
3/4 cup sugar
1/2 cup unsweetened cocoa powder
2 tsp baking powder
1/4 tsp salt
1 cup milk (preferably 2% or whole)
1/2 cup canola oil
2 large eggs
1/2 cup semisweet chocolate chips
16 soft caramel chew candies or 1/2 cup dulce de leche
Sea salt flakes

Instructions:
1. Preheat oven to 375 F. Spray muffin tins with non-stick cooking spray.
2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
3. In a separate medium bowl, whisk together milk, oil, and eggs.
4. Add wet ingredients to dry ingredients and stir until just combined (don’t overmix or muffins will be very dense).
5. Add chocolate chips and mix one time around.
6. Distribute batter evenly to muffin cups.
7. Press one caramel into the center of each cup (or drop a heaping teaspoon of dulce de leche into each center).
8. Lightly sprinkle each cup with sea salt.
9. Bake for 20 minutes, until a knife or toothpick inserted in a muffin (avoiding the caramel) comes out clean.
10. Optional: lightly sprinkle again with sea salt.
9. Let cool for 5 minutes in tins.

*If not eating immediately, reheat muffins in microwave for 15 seconds to melt caramel just before eating.

Flourless Chocolate Muffins

These ultra-rich, fudge-y Flourless Chocolate Muffins are the epitome for chocolate lovers. Without flour, their middle is moist and slightly sunken, reminiscent of a brownie undercooked on purpose. Every bite silky smooth, this recipe is great for gluten-free guests and those searching for a stand-out Passover dessert.

Flourless Chocolate Muffins (makes 12)

Muffins:
1 cup semisweet chocolate chips
1/2 cup unsalted butter
3/4 cup sugar
1/4 tsp salt
1 tsp vanilla extract
3 large eggs
1/2 cup Dutch-process cocoa powder

Glaze:
1/2 semisweet chocolate chips
1 Tbsp unsalted butter
2 Tbsp corn syrup

To make muffins:
1. Preheat oven to 375 degrees. Spray muffin tin with cooking spray.
2. In a microwave-safe bowl, heat butter and chocolate until butter is melted and chips are soft. Stir until the chips melt, reheating briefly if necessary. (You can also do this over a burner set at a very low heat).
3. Transfer melted chocolate/butter to a mixing bowl and stir in sugar, salt, and vanilla.
4. Add eggs, beating briefly until smooth.
5. Add cocoa powder and mix just to combine.
6. With an ice-cream scoop, distribute batter to muffin cups.
7. Bake for 15-20 minutes. (The top will have formed a crust and an inserted knife comes out clean. It’s ok if they are slightly sunken in the middle).
8. Cool in pan for 5 minutes before transferring to a wire cooling rack.

To make glaze:
1. Place chocolate chips, butter and corn syrup in a 1-cup microwavable measuring cup. 2. Microwave for 1-2 minutes or until chocolate chips can be stirred smooth.
3. Drizzle glaze over each muffin.

Hot Chocolate Cookie Muffins

Feeling festive now that every radio sings some sort of merry jingle? Reminiscing about the warm cup of hot chocolate waiting for your return from sledding down the driveway? Remember that attempt to make a good-looking snowman with your mittens clipped to your winter coat?

Almost too cute to eat, these Hot Chocolate Cookie Muffins taste like Christmas! On a cake plate, they look picturesque, and their flavors capture the wintery holiday with sugar cookie bottoms, candy-cane handles, chocolate fudge fillings, and melted marshmallows.

If you decide to make these off-season, or in honor of another holiday, switch the “holiday sprinkles” with a color of your choice. You could also use the loops of pretzels as handles.

Hot Chocolate Cookie Muffins (makes 12)

1 cup sugar
1/2 cup unsalted butter (softened)
1 egg
1 tsp vanilla extract
1/3 cup sour cream
1/2 tsp salt
1/2 tsp baking soda
2 cups flour
2 Tbsp sprinkles

Fudge Filling:
2 cups semi-sweet chocolate chips
1 14 ounce can sweetened condensed milk
1 tsp vanilla extract

You will also need:
12 candy canes (make sure you have more than 12, some may break)
tiny marshmallows
1 Tbsp white chocolate chips (melted)

Make Cookie-Muffin Base:
1. Preheat oven to 350F. Spray muffin tin with cooking spray.
2. With a hand mixer, cream together sugar and butter. Add egg, vanilla, sour cream, salt and baking soda and mix thoroughly.
3. Add flour and mix until smooth and flour is absorbed (texture will be dough-like).
4. Add 2-3 Tbsp sprinkles and mix until just combined.
5. With an ice cream scoop, distribute dough evenly in each muffin cup.
6. Bake for 20 minutes (make sure they don’t get too brown at the end, if they start to brown too much, take them out).
7. Immediately after taking muffin pan out, use a teaspoon measuring spoon to push into the middle of each muffin, creating a space for the fudge filling. (Do not push through the muffin completely).
8. Let cool in the pan 10-15 minutes, then, run a knife along the sides to pop them out.

Make the Fudge Filling:
9. In a microwave-safe bowl, combine the chocolate chips and condensed milk. Melt by microwaving in 1 minute increments before stirring.
10. Add vanilla and stir until smooth.

Assemble Muffins:
11. Cut the rounded part of off of the candy canes and adhere them to the side of each muffin with melted white chocolate.
12. Fill each cavity with fudge and put several tiny marshmallows on top.

Brownie Muffins

So chocolatey your head might explode, these fudgy brownie muffins are like individual pieces of heaven. Chewy, squishy, and decadent, they aren’t as dense as brownies, but they are so rich and creamy that they practically melt in your mouth. And, the glossy, wafer-thin top crust is just as delicious as the fudgy layer underneath.

However horrible or amazing your day, these brownie muffins will make it better.

Brownie Muffins (makes 12)

½ cup semi-sweet chocolate chips
1/2 cup unsalted butter
1-1/4 cups sugar
1 tsp vanilla extract
3 large eggs
3/4 cup all-purpose flour
1/4 tsp salt

1. Preheat oven to 325 F. Spray muffin pan with nonstick spray.
2. In a large mixing bowl, melt the chocolate and butter together in the microwave in 30 second increments, stirring after each until completely smooth and combined. Allow to cool for a few minutes.
3. To the chocolate/butter mixture, stir in sugar, then vanilla.
4. Add eggs, one at a time, mixing well after each egg.
5. Mix in the flour and salt.
6. Use an ice cream scoop to divide batter evenly into 12 muffin cups. Bake for 20-23 minutes until a knife inserted in the center will have moist crumbs. (Be careful not to over-bake.)
7. Allow muffins to cool for 10 minutes before transferring to a wire cooling rack. Or, cool in refrigerator for 30 minutes before transferring to a serving platter.

*These muffins are best served cold.

Chocolate Zucchini Muffins

Here’s an ingenious way to sneak green into your child’s diet. With this muffin, you can give your child cocoa with a clear conscience.

The combination of grated zucchini and chocolate is a God-send because the zucchini, which adds moisture, is a vegetable that passes virtually undetected. Whether you refer to this muffin as “chocolate” or “chocolate zucchini,” the flavor speaks for itself.

Chocolate Zucchini Muffins (makes 30)

3 eggs
1 3/4 cups white sugar
1/2 cup canola oil
1/2 cup applesauce
1/3 cup unsweetened dark cocoa powder (for nice, dark finished color)
1 1/2 tsp vanilla extract
2 1/2 cups zucchini, grated
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 heaping tsp cinnamon
3/4 cup mini chocolate chips
brown sugar (for sprinkling on top)


1. Preheat oven to 350 degrees. Grease muffin pans with cooking spray or line with paper liners.
2. In a large mixing bowl, beat the eggs. Beat in the sugar and oil. Add the applesauce, cocoa, vanilla, zucchini and stir well.
3. In a separate bowl, combine the flour, baking soda, baking powder, salt, and cinnamon.
4. Add wet ingredients to dry ingredients, mixing until dry ingredients are just moist. Fold in 2/4 of the chocolate chips.
5. Spoon batter into greased muffin pan, filling each muffin cup about 2/3 full.
6. Top with 1/4 mini chocolate chips and some brown sugar.
7. Bake for 20-25 minutes.
8. Remove from pan and let cool on a wire rack.

 

Avocado Brownie Muffins

Whether life’s simple pleasures include avocado is up for debate, but fudge and brownies are first on the list, and this muffin combines both while concealing the debatable fruit.

Dark chocolate and fudgy mousse come together with avocado in this incredibly decadent muffin that tastes like a brownie. In addition to being velvety smooth, this recipe just so happens to be grain-free and dairy-free.

The pureed avocado adds a creamy texture without influencing the taste.

If you ever make a muffin, this is the one to make.

Avocado Brownie Muffins (makes 12)

2 large ripe avocado, mashed (about 2 cups) 
2 eggs 
2 tsp vanilla 
1 Tbsp water 
1 cup semi-sweet chocolate chips (equivalent to 1/2 cup melted chocolate)
1 cup + 1 Tbsp cocoa powder 
1/2 cup sugar
1/2 tsp baking soda 
Pinch of salt

1. Preheat your oven to 355°F.
2. Grease muffin pan with non-stick cooking spray.
3. In a food processor or blender, puree avocado with eggs, vanilla and water until smooth.
4. In a microwave safe bowl or glass measuring cup, melt chocolate in 30 second increments until smooth.
5. Add melted chocolate to avocado mixture and mix through.
6. Add cocoa, sugar, baking soda and salt and mix until just combined.
7. If mixture is too thick, add 1 tablespoon of water and combine.
8. With an ice cream scoop, spoon mixture into muffin pan. Smooth out tops (optional).
9. Bake for 20-23 minutes or until an inserted knife comes out clean.
10. Allow muffins to cool for 4 minutes before removing them from the pan. Chill in the fridge.

*Notes:
These will last in the refrigerator for a few days (and are even better after a day or two). They keep in the freezer for months.

 

Chocolate Ricotta Muffins

These muffins are packed with protein and taste like smooth, creamy, cheesecake. Serve for breakfast, dessert, or after-school snack. My kids love the rich chocolate flavor, and I love the wholesomeness of the ricotta and milk.

Note: For best results, use whole milk ricotta, but lowfat also works well. You can substitute canola oil for some or all of the butter.

Chocolate Ricotta Muffins (makes 18)

1 cup ricotta cheese
2 large eggs
1 1/3 cup milk
1 Tbsp vanilla extract
4 Tbsp unsalted butter, melted and cooled OR 1/4 cup canola oil
2 cups all-purpose flour
1 1/4 cups granulated white sugar
2 tsp baking powder
1/2 tsp salt
2/3 cup cocoa powder, sifted
1 1/2 cups semisweet chocolate chips

1. Preheat oven to 350 degrees. Grease muffin pans with cooking spray or line with paper liners.
2. In a medium sized bowl, whisk ricotta cheese and then add eggs, one at a time, beating well after each addition. Add milk, vanilla extract, and cooled and melted butter, mixing well. Set aside.
3. In a large mixing bowl, whisk together flour, sugar, baking powder, salt, and cocoa powder.
4. Add the ricotta mixture to the flour mixture. Stir just until combined and then fold in chocolate chips. (Do not over mix this batter or the muffins will be tough when baked.)
5. Divide the batter amongst the 18 muffin cups using two spoons or an ice cream scoop.
6. Bake for 25 minutes or until lightly browned and a toothpick inserted in the center of a muffin comes out clean.
7. Remove from oven and place on a wire rack to cool.

This fudgy muffin hides a bright minty surprise. One bite into the warm chocolate reveals the chilly taste of cool, creamy mint.

This quick and easy recipe requires the use of only one bowl, and you may already have the ingredients in your kitchen pantry.

Mint-Filled Brownie Muffins (makes 12)

1 1/2 cup semisweet chocolate chips
½ cup unsalted butter
1 cup sugar
¾ tsp salt
3 eggs
½ cup all-purpose flour
¼ cup unsweetened cocoa powder
12 (1 ½-inch) chocolate-covered peppermint patties

1. Preheat oven to 350 F. Grease muffin pan with non-stick cooking spray.
2. Put chocolate chips and butter in a heatproof medium mixing bowl and microwave, just until melted, in 30 second intervals.
3. Whisk in sugar and salt until mixture is smooth.
4. Whisk in eggs.
5. Gently whisk in flour and cocoa until smooth (do not overmix).
6. Fill each muffin cup with batter to ¼ full. Place one peppermint patty on top of each muffin and gently press it into batter. Distribute the remaining batter on top of each muffin cup.
7. Bake for 30-33 minutes or until a knife inserted in the center of a muffin comes out with a few moist crumbs attached.
8. Transfer muffin pan to a cooling wire rack to cool completely before removing muffins.

*Notes:
Muffins can be stored up to 3 days at room temperature in airtight containers.

Flourless Double Chocolate Peanut Butter Muffins

For my readers who have requested gluten-free recipes, I consider it my duty to muffinize™ the crumbly, dry baked goods they are generally stuck with.

Moist, rich, and decadent, these muffins satisfy the chocolate-peanut butter craving. The recipe is dairy-free, oil-free, and contains no refined sugar. So how could the muffins be good? Believe.

With the help of a blender, the batter is transformed in minutes. No gluten means no risk of over-mixing the batter, which could create tough muffins.

Thanks to the banana and honey, the taste is sweet but not too sweet, the texture fudgy but still cakey and springy like muffins. The peanut butter is there, but does not overwhelm. The chocolate flavor is enhanced by the ever-presence of mini chips.

These muffins are a wonderful way to justify having chocolate for breakfast.

Flourless Double Chocolate Peanut Butter Muffins (makes 6)

1 medium/large ripe banana, peeled
1 large egg
heaping ½ cup creamy peanut butter
1/3 cup unsweetened natural cocoa powder
3 tablespoons honey (agave, brown rice syrup, or maple syrup may be substituted)
1 tablespoon vanilla extract
1/4 teaspoon baking soda
pinch salt, optional and to taste
heaping 1/2 cup mini semi-sweet chocolate chips
1 Tbsp mini semi-sweet chocolate chips (for sprinkling)

1. Preheat oven to 400 F. Spray muffin pan with cooking spray.
2. To the canister of a blender, add banana, egg, peanut butter, cocoa powder, honey, vanilla extract, baking soda, and salt. Blend on high speed until smooth and creamy, about 1 minute.
3. Transfer batter to a mixing bowl. Fold in heaping 1/2 cup chocolate chips and stir.
4. Use an ice cream scoop to distribute batter into muffin cups to ¾ full.
5. Sprinkle each muffin with a generous pinch of chocolate chips.
6. Bake for 13 to 18 minutes*, or until the tops are set, domed, springy to the touch, and a toothpick inserted into the center comes out clean, or with a few moist crumbs, but no batter.
7. Allow muffins to cool in pan for 10 minutes until they’ve set.**

*Watch muffins closely and bake until done.
**These muffins will keep airtight at room temperature for up to 5 days, or in the freezer for up to 4 months.

 

 

Red Velvet Cream Cheese Muffins

A red carpet delicacy, these cream cheese muffins are a muffinized™ Red Velvet cake, perfect for watching the Academy Awards (tonight). The color is rich and red, thanks to the beet powder, which is undetectable by taste.

The cream cheese swirled into the batter adds a subtle tang and provides extra moisture. The crumb topping is sweet, sandy, and slightly crunchy – it’s difficult not to pick off each crumb one by one!

Red Velvet Cream Cheese Muffins (makes 12)

Crumb Topping*
1/2 cup sugar
1/4 cup all-purpose flour
5 Tbsp unsalted butter, diced into cubes
*recipe yields extra crumb topping

Cream Cheese Mixture
4 ounces brick-style cream cheese, softened
1/4 cup sugar
1/2 tsp vanilla extract

Muffins
1 1/4 cups all-purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt, or to taste
1 large egg
1/2 cup canola or vegetable oil
1/3 cup buttermilk
2 Tbsp natural unsweetened cocoa powder
4 tsp beet powder (or 2 tsp red liquid natural food coloring)

1. Preheat oven to 375 F. Spray muffin pan with cooking spray.
2. Crumb Topping– In a medium mixing bowl, add the sugar and flour. Use two forks or a pastry cutter to cut in the butter until you have coarse crumbs; set aside.
3. Cream Cheese Mixture– In a separate medium mixing bowl, combine the cream cheese, sugar, vanilla, and beat with a handheld electric mixer until smooth, or whisk by hand until smooth; set aside.
4. Muffins– In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt; set aside.
5. In a separate medium mixing bowl, whisk together the egg, oil, buttermilk, cocoa powder, and beet powder.
6. Add the wet ingredients to the dry and stir just until moistened. (Do not overmix. Batter is thick and lumpy.)
7. Fold the cream cheese mixture into the muffin batter, being careful not to overmix. Some streaks of cream cheese should remain.
8. With an ice cream scoop, spoon batter into muffin pan, filling each cavity to two-thirds full. (Do not overfill. If cavities are too full, the crumb topping will spill onto muffin pan).
9. Evenly sprinkle each muffin with the crumb topping.
10. Bake for about 17 to 19 minutes, or until a knife inserted in the center of a muffin comes out clean. Allow muffins to cool in pan for 5 minutes before transferring to a wire cooling rack to cool completely.

Muffins will keep airtight at room temperature for up to 3 days, or in the freezer for up to 4 months.
